Here is great weekend brunch idea for making Puffy Oven Apple Pancakes.

What I liked best about this pancake recipe was the option to prepare it the night before, cover and refrigerate making this a great make ahead meal idea.

I am always looking for easier ways to get meals on the table whether it be for dinner or breakfast.

I find I use this recipe when preparing a brunch for out of town guest or special occasions here at my house.

Puffy Oven Apple Pancakes

  • Serves 4
  • Prep Time: 30 minutes (can mix the night before, cover and refrigerate.)
  • Bake Time: 15-20 minutes

Pancake Ingredients:Puffy Oven Apple Pancakes

  • 1 1/2 cups flour
  • 1 1/2 cups milk
  • 6 large eggs
  • 1 tbsp. sugar
  • 1 tsp. salt
  • 1/2 cup (1 stick butter)

Apple Filling:

  • 2 large Golden Delicious or Granny Smith Apples, peeled and sliced
  • 1 tbsp. butter
  • 1/4 cup brown sugar
  • whipped cream (optional)

Pancake Directions:

  1. Mix flour, milk, eggs, sugar, salt and let stand for 30 minutes.
  2. Preheat oven to 450 degrees, place baking pan or casserole dish in oven and add butter.
  3. Remove once butter is melter, pour pancake mixture into heated pan and return to oven.
  4. bake for 15- 20 minutes or until edges are puffed and golden.

Apple Filling Directions:

  1. While pancake bakes, add apples and butter to a skillet and cook 5-10 minutes or until tender.
  2. Add brown sugar and stir until dissolved then transfer to a serving bowl.

To serve:

  • Cut pancake into quarters and fill each serving with apples. Top with whipped cream if desired.
  • TIP: make sure the family/guests are at the table, ready to eat as the pancake will slump quickly.
